Ricotta this week comes from two local farms.

One is made from jersey milk and is ladled by hand, ready to be eaten with a spoon for a healthy, protein-packed breakfast or lunch. Called Inagadda Ricotta, it comes from Four Fat Fowl in Stephentown, NY.

The other is made with goat's milk by Ardith Mae in Stuyvesant, NY
