Ramps this week come in bundles of eight or twenty-four and are sustainably foraged by locals from private property (rather than public lands) around New Lebanon, N.Y., and Lanesborough, Mass.
They are sustainably harvested according the practices recommended by the Cornell Cooperative Extension in Ulster County. We don’t take the whole bulb, and we leave most of the plants in every clump. You can find the recommended practices here.
