Potatoes this week come two pounds at a time in several varieties from two local farms:
• Organic Peter Wilcox (purple skin and gold interior) and Red Maria potatoes (red skinned all-purpose potato) are from Abode Farm in New Lebanon, NY
• White potatoes (All-purpose) and belmonda gold potatoes (perfect balance of waxy and starchy) are from Sparrow Arc Farm in Copake, NY
