Pork chops this week are from New Lebanon Baloney Co, which sources whole pigs from Climbing Tree Farm in New Lebanon, NY. The pigs are humanely raised and have full access to forest and pasture.
NEW this week are coppa steaks. Similar to our pork chops, these pork coppa steaks are boneless and come with a nice little fatcap. Instead of coming from the loin, which is known for it’s delicate texture and color, these coppa steaks hail from the pork shoulder. Pan fry these thick steaks until dark brown and finish in the oven until medium (140°F internal temperature) and slice thin. The flavor is phenomenal and the color is rich.
