Rice dishes and risotto this week come from two local producers:
• Rice dishes are available from Alima's Cuisine in Old Chatham, NY. Alima's recipes from West Africa have been passed down through generations in Alima's family:
+ The riz graz is curried rice with vegetables and chicken
+ The jollof is a different curried rice with vegetables and chicken
+ The washara is fluffy couscous and vegetables topped with Alima's tomato sauce
• Prepared risotto this week comes by the pint. The rice is arborio, and the other ingredients include locally foraged black trumpet mushrooms, butter, grana padano, and shallots. It was made by Scout Metzler at the New Lebanon Community Kitchen in New Lebanon, NY.
